Rosemary Shortbread Cookies with Red Grapefruit Buttercream Filling  

These cookies combine the sweet and tangy flavors of red grapefruit and buttery shortbread with a savory touch of fresh rosemary. They are filled with a smooth red grapefruit buttercream for a creamy and crumbly combination in each bite.


30 minutes prep, 20 minutes baking.

1 cup unsalted butter, softened
½ cup confectioner’s sugar
1 tablespoon Paramount Citrus red grapefruit zest
1 teaspoon finely chopped fresh rosemary
½ teaspoon salt
¼ teaspoon pure vanilla extract
2 cups unbleached all-purpose flour

1 ½ cups confectioner’s sugar
½ cup unsalted butter, softened
2 teaspoons Paramount Citrus red grapefruit juice
2 teaspoons milk or cream
1 teaspoon Paramount Citrus red grapefruit zest
Pinch of salt


1. Add the 1 cup of butter and ½ cup of confectioner’s sugar to the bowl of a mixer fitted with the paddle attachment. Mix on low until combined and then increase the speed to medium-high. Cream for 3 minutes, scraping the sides of the bowl as needed.

2. Mix in the tablespoon of grapefruit zest, rosemary, salt and vanilla.

3. With the mixer on medium, mix in the flour, about ½ cup at a time, until all ingredients are combined.

4. Shape the dough into a disk, wrap in plastic wrap and refrigerate for 30 minutes.

5. Preheat the oven to 350 degrees F. Roll the dough on a floured surface to ¼-inch thickness. Cut the cookies in 2-inch circles. Place on an ungreased baking sheet.

6. Bake for 20 minutes, until the cookies are firm. Let cool for one minute and then transfer the cookies to a rack to cool completely.

7. To make the filling, add the 1 ½ cups of confectioner’s sugar and ½ cup of butter to the bowl of a mixer fitted with the paddle attachment. Turn to low and mix for 1 minute. Turn to high and beat for 3 minutes until light and smooth, scraping the sides of the bowl as needed.

8. Turn the mixer to medium and add the grapefruit juice and milk. Turn to high and beat until combined. Mix in the grapefruit zest and salt.

9. Transfer the filling to a pastry bag. Flip 14 of the cooled cookies upside down on a flat surface. Pipe an equal about of filling (about 1 tablespoon) over each of the cookies. Top each with a second cookie to create a cookie sandwich and serve.

I have never wanted a food so much in my entire life. Except instead of rosemary… lemon.

THERE’S SO MUCH GOD DAMN SPINACH in this shit even Popeye can’t hate. Yeah spinach makes you swoll as fuck, we know that. But did you know just one cup of spinach is over 300% of your daily recommended Vitamin A? Sweet fuck. You worried about acne? Wrinkles? Any other skin shit? Spinach to the mother fucking rescue. That shit keeps your skin looking so fresh and so clean, not to mention helping to prevent skin cancer. Spinach has these plant-based compounds called “flavonoids” that not only repair damaged skin but also fight multiple types of cancer. Everybody knows I ain’t even fucking playing when it comes to dick cancer, I gotta have my shit in tact.

IF YOU SMOKE cigarettes (tumblr crew I’m looking at you), DO NOT take any Vitamin A or beta carotene supplements. Studies have shown that combining those supplements with tobacco drastically increases your risk for lung cancer. But then again, smoking drastically increases your risk for lung cancer. So quit that shit.

You want to make this shit at home and tell Jamba Juice they can go fuck themselves by not paying for their high calorie sugary shit? Recipe below for a Thug Kitchen Original:

Ectoplasm free and Dr. Venkman approved

  • 2 handfuls of spinach (about 2 cups)
  • 2 frozen bananas
  • 1 cup chopped and skinned cucumber
  • 4 medium chunks of pineapple
  • 1 cup coconut water or tap
  • 1/4 cup orange juice
  • 1 tablespoon flax oil (optional)
  • 6-8 mint leaves (optional, but I dig that shit)
  • yields ~20 ounces

Toss that shit in a blender and zap it. If you prefer it a little sweeter, add some more pineapple to that shit. DRINK UP, CHAMP.

Seriously though, fuck Jamba Juice. Only they could make smoothies as unhealthy as McDonald’s made oatmeal.

butterbeer cupcakes
(makes around 18)

for the cupcakes:
2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1/2 cup dark brown sugar, packed
3 large eggs
1 tablespoon butterscotch schnapps
1/2 cup buttermilk
1/2 cup cream soda

For the filling:
5 1/2 ounces butterscotch chips (half an 11 ounce package or a little less than a cup)
1/2 cup heavy cream

For the frosting:
1/2 cup (1 stick) unsalted butter, softened
1/3 cup butterscotch filling
1 tablespoon butterscotch schnapps
1/8 teaspoon salt
3 1/2 to 4 cups powdered sugar
Splash of cream soda (as needed)

1. to make the cupcakes, preheat oven to 350º and line cupcake pans with liners.
2. in a medium bowl, whisk together the flour, baking soda, baking powder and salt and set aside.
3. in the bowl of a stand mixer fitted with the paddle attachment, cream the butter on medium speed until light and fluffy. add both sugars and continue beating until well combined. on low speed, add eggs one at a time, beating well after each addition.
4. combine the schnapps and buttermilk. add the dry ingredients in three batches, alternating with the cream soda and buttermilk.
5. mix until just combined, scraping the sides and bottom of the bowl as needed. fill each cupcake liner about 3/4 full, then bake for 15-17 minutes until a toothpick inserted in the center comes out clean. cool completely on a wire rack.
6. while the cupcakes are cooling, make the filling by combining the butterscotch chips and heavy cream in a glass bowl set over a pot of simmering water. stir occasionally until combined.
7. remove from heat and allow to cool to room temperature. transfer to a squeeze bottle and fill each cupcake just until the filling comes to the top.
8. to make the frosting, cream the butter on medium speed until light and fluffy. Add the butterscotch filling, schnapps and salt and beat until well combined.
9. on low speed, beat in the powdered sugar one cup at a time until desired consistency is reached. Add cream soda as needed to thin the frosting.
10. frost cupcakes and drizzle with remaining syrup.

1) shitload of turkey stock. 2 cups? 3? Who knows.

2) tbsps of chicken stock like the concentrate stuff or w/e

1) can coconut milk

3) tsps curry (or however much you want)

2) tsps cumin

1) tsp cayenne pepper

1 1/2) onion chopped up all tiny

2) cans mushrooms ( I like the fake ones in cans yum you can use w/e you want )

1) can diced tomatoes (or real tomatoes w/e)

1) head garlic (we like a lot of garlic)

1) can baby corn

maybe that’s it?! I think. anyway it’s delicious sometimes you need to add more stock after a few hours because the tomatoes infiltrate everything but yum-a-mundo

my sister and I don’t eat meat but I wanted turkey/chicken-flavoured stuff so stock it is. You can put meat in?!?!?! If you want?!?!?!?!?!
